Double Fried Buffalo Mission Chinese Drumlets

Instacart gave us an unintentional gift. They delivered drumlets instead of chicken thighs. We modified our double fried Buffalo/Mission Chinese wing mashup to make Double Fried Buffalo-Mission Chinese Drumlets. The drumlets have a better bite than a wing because the meat is more plentiful and juicier.

The only change to the original recipe (which you need to access to make this batch) is that the first fry of the drumlets is for 10 minutes instead of 7 minutes. The second fry is still 8 minutes, but it could go longer if you like darker wings.

The sauce is incredible, and we found that we need to make a double batch of sauce to cover the larger drumlets. You could get away with 1.5X of the sauce batch but not much less.
